Camp Fimfo Waco Offers Elevated Menu with Executive Chef Hire

Campers at Camp Fimfo Waco are to enjoy scrumptious dishes from a campfire-inspired menu showcasing the flavors of Texas, crafted by the campground’s executive chef, Sean Kelley.

The campground, which made its debut earlier this month, has appointed Kelley, who will be overseeing culinary operations.

With a vision to bring the campfire behind the kitchen door, Chef Kelley’s menu for Camp Fimfo will include elevated dishes reminiscent of those enjoyed with family and friends around a crackling outdoor campfire. Produce and proteins are sourced from local farms focusing on Central Texas flavors, the campground noted in a press release.

Kelley relocated to Waco from Denver, Colorado in 2018 to oversee the opening of Chip and Joanna Gaines’s flagship restaurant, Magnolia Table.

“As soon as I arrived in Texas, I felt like I found my home,” said Chef Kelley. “I love the flavors of the southwest and their versatility. I’m also finding inspiration from the setting of Camp Fimfo, the gathering of families and friends, and the smokiness that comes from a campfire. I want the menu to reflect all those things.”

Like many talented chefs, he learned the art of cooking by immersing himself in his craft. From part-time jobs at country clubs and restaurants during high school and college to working alongside such talents as Top Chef Masters Lorena Garcia, Kelley found himself soon on the frontlines with the Denver Broncos, preparing meals for the franchise’s training camp.

Chef Kelley’s years under the toque have given him a unique style and technique all his own. He remains passionate about sourcing thoughtfully raised products, choosing local purveyors and farmers, as reflected in the menus he has created for Camp Fimfo.

Camp Fimfo Waco, with its full hook-up RV sites and turnkey cabins, is situated 90 miles south of Dallas and less than 200 miles north of Houston.

The property is home to the Mess Hall, featuring an elevated dining experience, as well as Squirrely’s Tavern, offering wine, beer, and handcrafted cocktails—both welcome non-guests.
