The European Trade Fair of Tourism Trends, SETT 2025, began its festivities on Monday night with “Sett Andalou,” an Andalusian-themed pre-show dinner hosted and sponsored by Crippaconcept.
Held at Mas du Cheval in Lattes, the evening welcomed exhibitors, federation representatives, and tourism professionals from across Europe to a vibrant networking event on the eve of the continent’s largest outdoor-hospitality trade fair.
Guests gathered to enjoy live flamenco performances, Spanish guitars, and Mediterranean spirit.
The event brought together leaders from the outdoor-hospitality sector for an evening of warmth and celebration that reflected the collaborative spirit of the industry.
A Lively Prelude to Europe’s Premier Outdoor-Hospitality Trade Fair
Organized by the Occitanie Outdoor Hospitality Federation, SETT 2025 will officially take place from November 4 to 6 at the Parc des Expositions de Montpellier in France.

The trade fair will gather more than 730 exhibitors and nearly 18,000 professionals from across Europe, offering a platform to exchange ideas, discover new technologies, and explore trends shaping the tourism and outdoor-hospitality industries
This year’s theme places artificial intelligence at the heart of the conference program, emphasizing its growing role in personalizing guest experiences, improving operations, and enhancing marketing strategies.
“Already in use in many establishments, AI optimizes resource management, personalizes guest services, anticipates traveler expectations, and improves energy efficiency,” Philippe Robert, president of Fédération de l’Hôtellerie de Plein Air Occitanie (FHPA Occitanie), said in a press release.
Innovation, Sustainability, and AI at SETT 2025
Beginning today, SETT’s three-day program will spotlight AI-driven innovation and sustainable practices in outdoor hospitality.
Sessions such as “Reinventing Your Campsite with AI” and “AI for Guest Reviews: From Chore to Superpower!” will feature experts from chambers of commerce, digital agencies, and tourism-tech firms discussing how artificial intelligence is reshaping operations and guest engagement.
The much-anticipated SETT d’Or Awards, scheduled for Tuesday evening, will showcase 63 innovations that are redefining the tourism experience across Europe—from eco-friendly infrastructure to smart technologies.

The edition of SETT officially opened today, November 4, at 11:00 a.m., with a ceremony in Hall A attended by Nicolas Dayot, President of the FNHPA; Philippe Robert, President of FHPA Oc; and the presidents of the partner federations. The event marked the beginning of this year’s exhibition, which continues to serve as a major meeting point for professionals in the outdoor hospitality sector.
At 11:30 a.m., two sessions took place simultaneously at the IA Center. In Room 3, Martine Barbier, Doctor of Law and consultant specializing in labor law, joined Rémi Peschier, President of the FNHPA Social Commission, and Léa Demarez, legal counsel in employment law at the FNHPA, to present a session on Job Classifications.
From 2:30 p.m. to 5:00 p.m., the IA Center is hosting Expert Appointments, sessions reserved for members of the Outdoor Hospitality federations. These one-on-one consultations will provide participants with the opportunity to receive tailored advice from industry specialists.
At 4:30 p.m. in Room 1, Yohann Darmayan, co-founder and CEO of Elaia & Geek Tonic, and Pamela Hamille, Head of Elaia, will present The Emissions sIAve: The AI That’s Revolutionizing Outdoor Hotel Marketing.

In the evening, Maître Régis Serpentier of Alcade & Associés will lead a 5:30 p.m. session in Room 3 on Tax Choices for the Remuneration of the Campsite Manager, followed by the SETT d’Or Awards Ceremony at 6:00 p.m. in Room 1.
Wednesday and Thursday will continue with workshops focused on revitalizing small campgrounds, managing guest relations through technology, and addressing long-term sustainability in tourism operations.
The event will also host networking sessions, supplier showcases, and product launches across 60,000 square meters of exhibition space.
Since its founding in 1978, SETT has evolved from a regional trade fair into a pan-European meeting point for tourism innovation.
Today, the conference attracts professionals from France, Italy, Spain, Portugal, Germany, the Netherlands, and beyond—bridging the outdoor-hospitality, restaurant, and leisure sectors.
With its blend of innovation, education, and networking, SETT 2025 is once again set to shape the roadmap for the next tourism season, spotlighting the tools and trends that will define how Europe’s outdoor-hospitality industry continues to grow.
